हेल्दी फूड क्या है और हमें कितना खाना चाहिए, इसका हिसाब आपको कोई भी डाइट एक्सपर्ट बता देगा। लेकिन दुनियाभर में एक ही सचाई सामने आ रही है- डाइट प्लान्स काम नहीं करते, क्योंकि उन पर टिका रहना 80 फ़ीसदी लोगों के बस की बात नहीं होती। यानी जुबान पर काबू लगभग नामुमकिन-सी बात है। लेकिन क्या यह मजेदार खाने से हार जाने का ही मामला है, जो हमें लगातार मोटा और बीमार बनाए जा रहा है, या फिर कुछ और? सवाल वही कि हम ओवर ईटिंग क्यों करते हैं? इसका जवाब जानने के लिए हमें बायोकेमिस्ट्री का एक छोटा-सा लेसन जानना होगा।

जब हमारी बॉडी को भोजन की ज़रूरत महसूस होती है, तो फैट सेल्स एक हॉरमोन छोड़ते हैं, जिसका नाम ग्रेलिन है। इससे हमें भूख लगने का अहसास होता है। भोजन के दौरान हमारे दिमाग़ में एक और केमिकल, ‘डोपेमाइन’ ऐक्टिव हो जाता है, जिससे हमें मजे का अहसास होता है। जब बॉडी की ज़रूरत पूरी हो जाती है, तो ‘लेप्टिन’ नाम का हॉरमोन निकलता है। यह डोपेमाइन का असर मिटाता है, यानी खाने में हमारा मजा खत्म होने लगता है। इसी दौरान ग्रेलिन का असर भी ख़त्म हो जाता है और हमारी भूख शांत हो जाती है।

भूख और भोजन का ये कुदरती सिस्टम फेल हो रहा है और इसीलिए हमारा पेट कभी नहीं भरता। हम खाते रहते हैं। क्यों? इसकी दो वजहें बताई जा रही हैं और दोनों ही लेप्टिन हॉरमोन से जुड़ी हैं। एक ये कि शुगर से लेप्टिन बेअसर होने लगता है। फैट, और उससे भी ज्यादा शुगर आज के जमाने के भोजन पर हावी है। हमारी डाइट में मौजूद यह एक्स्ट्रा शुगर लेप्टिन के ख़िलाफ रेजिस्टेंस का काम कर रही है, जिससे भूख मिटने का अहसास पैदा नहीं होता और खाने का मजा बना रहता है।

वैज्ञानिकों ने भुक्खड़पने की जो दूसरी वजह बताई है, वह यह कि कम नींद का बुरा असर लेप्टिन जैसे हॉरमोंस का बैलेंस बिगाड़ रहा है। जब लेप्टिन काम नहीं करता और डोपेमाइन का हाई लेवल बना रहता है, तो एक नई परेशानी पैदा हो जाती है। दिमाग़ इसका आदी होने लगता है और भोजन में पहले जितने मजे के लिए हमें पहले से ज्यादा खाना पड़ता है।

बायोकेमिस्ट्री के इस लेसन से हमें यह भी पता चलता है कि भूख और भोजन का यह सारा खेल दिमाग़ में ही चलता है और वहीं इसका क्लू हमें मिल सकता है। ग्रेलिन, लेप्टिन और डोपेमाइन पर कंट्रोल के जरिए बायोकेमिस्ट इससे निपटें, लेकिन क्यों नहीं दिमाग़ की विद्या साइकॉलजी को आजमाया जाए? तो अब रैटाटुई की बारी है।

कार्टून मूवी का वह चूहा दुनिया का बेहतरीन फूड एक्सपर्ट है और वह जब स्वाद का ज़िक्र करता है, तो खट्टे, मीठे, नमकीन स्वादों की अनगिनत परतों के बीच हम काले बैकग्राउंड में रोशनी की तरंगों, आतिशबाजी और बूंदों की तरह उसे देखते हैं। कोई भी खाना रूप, रस और गंध की कई झलकें अपने में समेटे रहता है। एक फूड टेस्टर की तरह क्या आपने कभी उसकी खोज की?

यह खोज क्यों जरूरी है? इसलिए कि जब हम डूब कर उस स्वाद में खोते हैं, तो दिमाग़ को संतुष्टि का अहसास ज्यादा होता है। हम दिमाग़ और उसके रसायनों को अपने गेम में शामिल कर लेते हैं। हम खुद पर कंट्रोल पा लेते हैं और तब थोड़ा खाना भी हमें तृप्ति का गहरा अहसास दे जाता है।

इस माइंड गेम में दो बातें अहम हैं। पहला है ध्यान, यानी खाने के दौरान अपने ख़यालों को भोजन और उसके स्वाद की तलाश पर टिका देना। कुछ और दिमाग़ में न हो, खाने के सिवा। आज की लाइफस्टाइल में हम खाना कभी खाने के साथ नहीं खाते। हम या तो काम के साथ खाते हैं या टीवी के साथ। हमारा दिमाग़ खाने को नोटिस ही नहीं करता और हम भकोसते जाते हैं।

और दूसरी बात है, गंध। बहुत कम लोगों को इस सचाई का अहसास होगा कि स्वाद दरअसल गंध पर टिका होता है। इसीलिए नाक बंद होने पर खाना बेस्वाद लगता है। भोजन की खुशबू उतनी ही असरदार है, जितना उसे खाना। इसीलिए किचन में खाना बनाते-बनाते भूख मर जाती है।

फूड साइकॉलजी आसान है और प्रैक्टिकल भी। अगर हम उस चूहे की नकल करें, तो हमें ओवर ईटिंग की तलब महसूस ही न हो। हां, यह उस मास्टर शेफ के कारोबार के लिए बुरी बात होगी, लेकिन हमें उससे क्या।
